Oatflour Crumpets, Egg-less and Vegan

This recipe makes delicious oat crumpets that are wheat free. The main ingredients are oatmeal flour, quick cooking oats and mealie meal or cornmeal. A very small amount of gor or jaggery is used to sweeten the crumpets. Here is where you can find out More about Gor/Jaggery. Raisins are used because they taste good as well as add sweetness to the crumpets. Please note that a non-stick pan is recommended so that you can use just the slightest amount of oil.

Combined with powdered cinnamon and a few other ingredients these Vegan oats flour crumpets with mealie meal taste good. I enjoy them buttered but you may add fruit to make it a really special dish. You may top crumpets with any fruits that you have at home. If you like cream, top it with regular whipping cream or vegan cream. I topped mine with strawberries, pear and vegan cream. The best part is that it can be made in about 20 minutes.

INGREDIENTS

  1. ½ cup oatmeal flour
  2. ¼ cup quick cooking oats
  3. ¼ cup mealie meal or corn meal
  4. ¼ tsp. baking soda/bircarbonate soda
  5. a pinch of salt
  6. 2 tsps. baking powder
  7. 1 tsp. gor/jaggery
  8. 1 tblsp oil, plus about 2 tblsp. See explantion below* (I used canola oil)
  9. ½ raisins
  10. 1 tblsp. dessicated coconut, unsweetened
  11. 1 tblsp. vinegar
  12. 1-1½ cups of equal amounts of milk amp; water. Mix and use as needed to make a batter that is not too thin.(I used almond milk)

METHOD

  1. I used hot water and mixed it with milk from the fridge so I got a consistency of luke warm milk/water mix
  2. Mix all the dry ingredients together
  3. Combine and thoroughly mix vinegar, 1 tblsp. oil and , 1 cup of water and milk mix
  4. The batter should be thick but not stodgy. Add more milk to make a batter that flows, but remains thick
  5. Add this to the dry ingredients. Heat a non stick pan/griddle until it is hot, add a few drops of oil at a time
  6. Take about a small ladle full of batter and pour small batches of batter onto pan, until the pan is full. All space for crumpets to spread
  7. Cook then flip & cook the other side
  8. Make all the crumpets this way
  9. Serve with butter and top with fruit, if you like it that way

About Making the Crumpets

I used just 1 teaspoon of gor/jaggery, a kind of sugar. You may substitute this with artificial sweetener. If you prefer to use regular butter or milk, the recipe should still work. Here is where you can find out More about Gor/Jaggery.

*You many not use all of the extra 2 tablespoons of oil. Use a spatula to just dip into the oil and then smear the pan. This way you use a real minimum amount of oil. You could add a few drops to the edges of the crumpet if you think it looks too dry.

In this recipe I used 1 tablespoon of vinegar to replace an egg. Add this mix to the rest of the ingredients. Towards the end, I just added a little more milk water mix to try making a pancake. The picture has one of the little pancakes as well. But I think the crumpets work better than the pancakes.

Oats Crumpets with Mealie Meal are a very healthy way to enjoy breakfast. It will make a good start to your day.
