A Delicious Plate of Oatflour Crumpets
Recently we have been having oats for breakfast. I make this Vegan style, with almond or soy milk and vegan butter. In addition to oatmeal, we sometimes have semolina and mealie meal/corn meal porridge as well. So I used oatmeal, oatmeal flour and semolina to make something different.
Combined with powdered cinnamon and a few other ingredients I was quite pleased with these Vegan oatsflour crumpets. I enjoy them buttered but you may add fruit to make it a really special dish. Please note that a non-stick pan is recommened so that you can use just the slightest amount of oil. I microwaved some dried apricots with water until it was just soft, mashed it a bit, and added bananas and blueberries. These fruits do add sweetness to the crumpets. The best part is that it can be made in about 20 minutes.

I used just 1 tablespooon of sugar. You may substitute this with artificial sweetener. If you prefer to use regular butter or milk, the recipe should still work.
*You many not use all of the extra 2 tablespoons of oil. Use a spatula to just dip into the oil and then smear the pan. This way you use a real minimum amount of oil. You could add a few drops to the edges of the crumpet if you think it looks too dry.
**Flax seeds may be used as a substitute for egg. Use 1 tablespoon of crushed flax seeds and soak in 3 tablespoons of water. Microwave for about 15 seconds and mix well. It should now have a thick consistency. Add this mix to the rest of the ingredients
