Oatflour Crumpets, Egg-less and Vegan

Recently we have been having oats for breakfast. I make this Vegan style, with almond or soy milk and vegan butter. In addition to oatmeal, we sometimes have semolina and mealie meal/corn meal porridge as well. So I used oatmeal, oatmeal flour and semolina to make something different.

Combined with powdered cinnamon and a few other ingredients I was quite pleased with these Vegan oatsflour crumpets. I enjoy them buttered but you may add fruit to make it a really special dish. Please note that a non-stick pan is recommened so that you can use just the slightest amount of oil. I microwaved some dried apricots with water until it was just soft, mashed it a bit, and added bananas and blueberries. These fruits do add sweetness to the crumpets. The best part is that it can be made in about 20 minutes.

  1. ½ cup oatmeal flour
  2. ¼ cup quick cooking oats
  3. ¼ cup semolina
  4. ¼ tsp. baking soda/bircarbonate soda
  5. a pinch of salt
  6. 2 tsps. baking powder
  7. 1 tbls sugar
  8. 1 tblsp oil, plus about 2 tblsp. See explantion below* (I used canola oil)
  9. ½ cup mix of dried craberries and raisins
  10. 1 tblsp. dessicated coconut, unsweetened
  11. 1 tblsp. crushed flax seeds** combined with 3 tblsp. water
  12. 1-1½ cups milk as needed to make a batter that is not too thin.(I used almond milk)


  1. Mix crushed flax seeds with 3 tblsps. water & microwave for about 15 seconds. Mix well*
  2. Mix all the dry ingredients together
  3. Add flax seed mix, 1 tblsp. oil, 1 cup of water and milk mix, to make a thick batter
  4. The batter should be thick but not stodgy. Add more milk to make it a batter that flows, but remains thick
  5. Heat a non stick pan/griddle until it is hot, add a few drops** of oil at a time
  6. Take about a small ladle full of batter and pour small batches of batter onto pan, until the pan is full. All space for crumpets to spread
  7. Cook then flip & cook the other side
  8. Make all the crumpets this way
  9. Serve with butter and top with fruit, if you like it that way

About Making the Crumpets

I used just 1 tablespooon of sugar. You may substitute this with artificial sweetener. If you prefer to use regular butter or milk, the recipe should still work.

*You many not use all of the extra 2 tablespoons of oil. Use a spatula to just dip into the oil and then smear the pan. This way you use a real minimum amount of oil. You could add a few drops to the edges of the crumpet if you think it looks too dry.

**Flax seeds may be used as a substitute for egg. Use 1 tablespoon of crushed flax seeds and soak in 3 tablespoons of water. Microwave for about 15 seconds and mix well. It should now have a thick consistency. Add this mix to the rest of the ingredients

Oats Crumpets are a very healthy way to enjoy breakfast. It will make a good start to your day.
